You don’t have to enter the contest in order to enjoy some free food. You may also be apart of the judging/awarding of the 2010 Best Chili Prize. The winner will recieve a brand new slow cooker! (What could be better for a chili enthusiast?!?)
Need a last minute recipe? Check out this link for some great ideas! Below is my favorite!
• 1 Tablespoon olive oil
• 1 large chopped onion
• 6 large garlic cloves, minced
• 2 medium jalapenos, minced
• 2 lbs ground sirloin
• 2-4 Tablespoons chili powder (adjust according to personal taste)
• 1/2 teaspoon salt
• pepper to taste
• 1 16oz can diced tomatoes (make sure no sugar added)
• 2 cups chicken broth (again no sugar added)
Atkins Chili Recipe Directions
Heat oil in heavy saucepan over medium-high heat. Add onions and garlic. Saute about 8 minutes or until onions are translucent. Add ground sirloin and cook until brown, breaking up meat with a spatula as it cooks. Add chili powder, salt, pepper, and jalapenos to the meat and onions. Stir in died tomatoes and chicken broth.
Reduce heat to low and simmer for at least 1 and a half hours.
See you tonight!

I recently went to spend some time with my best friend and her husband in Florida. On my last night there, Becca and I decided to make use of her wedding presents and try our hand at making some sushi. Above is a picture of the actual sushi we made! We were a little nervous as neither of us had made it before, but it was surprisingly easy and most of all fun!
Here are some tips for making sushi at your Chandler Crossings apartment:
- Make sure you have the right ingredients. It DOES matter what type of rice you have, so make sure you purchase the kind made especially for sushi rolls.
- Do all your prep first. Make sure all ingredients are cut and ready so that when you start they are right at your fingertips.
- Have a sense of humor. The first time you make it, it may not be perfect, but that is all part of the fun. (The first roll I made turned out as an oval).
Ingredients
- 1 cup prepared sushi rice
- ½ avocado
- 4 crab sticks (or real king crab or jumbo lump crab meat for a luxury California roll)
- ½ cucumber
- 1 sheet dried nori seaweed
- 2 tablespoons mayonnaise
- 2 tablespoons sesame seeds
- For a spicy California roll, add a few drops of hot pepper sauce to the mayonnaise
Preparation
- Cut the peeled and pitted avocado and the peeled cucumber in quarters lengthwise.
- Spread the sushi rice over the sheet of seaweed, and sprinkle the sesame seeds over the surface.
- If you don’t have a bamboo rolling mat, place a sheet of plastic wrap on the worktop, and turn the layer of seaweed and sushi rice upside down flat on the the plastic wrap so that the seaweed ends up on top.
- Place the avocado, cucumber and crab sticks evenly down the center, and coat the filling with mayonnaise. Roll the layer up from one edge, and slice the roll into 8 pieces.

Enjoy, and happy rolling!

Cool, decked out apartment-photo by Kay
Hey guys,
I’m back with some apartment tips that will help you fully experience an enjoyable, comfortable, inexpensive, yet lavish lifestyle in your Chandler Crossings apartment home.
First tip: Making your apartment the fliest pad in East Lansing.
FYI: Fellas, yes, you can dec out your digs also. The ladies actually dig cleanliness, go figure right?
1. Smell good. Would it hurt to put in a glade plug- in your common area? I think not. Smell is one of the strongest and most lasting impression a person can have. I mean come on, have you ever smelled someones breath and it nearly took you out. Yeah, same concept here. Whether good or bad, smell leaves a lasting impression.
2. Go ahead and live a little. You paint that wall burnt orange with a hint of magenta! Lol, maybe not that color scheme, but all of Chandler Crossings apartments, The Club, The Village, and The Landings allow you to paint your walls provided you paint them back the original color before your leave. So why not add a little something that will make the apartment your own. After all, outside of class, this is where you will be sleeping, eating, and studying. Have something to look at while doing it I say.
3. Now this may be hit or miss because many people don’t know the difference between patio furniture and living room furniture so hopefully this misconception is put to rest after this. All of Chandler Crossings apartments offer either patio’s or balconies; not every apartment in East Lansing or anywhere else for that matter can attest to that. Lets liven up our balconies by investing in a nice patio set. Many are really reasonably priced at nearby stores. To feel that cool summer breeze hitting your face just right as you study for your organic chemistry midterm, just might be the one thing you need from preventing you from casting yourself over the rail. Just Saying.
4. Lastly, it really goes without saying, because mom taught you better. Make your bed. You would be surprised how much cleaner your room looks with a made up bed. Right after you drag yourself from those warm sheets and blankets; take a minute to make it up. I am a witness to how much better you feel after a hard day of classes, work, and study sessions, to come home to a nice clean room some how puts a check next to “something actually completed” portion of your to do list for that day.
Well guys, go forth and conquer. Make that apartment something you take pride in. No, It is not just the four walls that I pay to lay my head at. No, it’s my home and if you ask me, it’s the best MSU apartment on the block.
-Jay

So today while I was at work one of our resident events was going on. It was a self-defense course for women taught by Robert Verdell, who also has a class at Lansing Community College. Ladies, I don’t know about any of you, but since the time I was small my mom has been striking fear into my heart in regards to attackers and strangers. There was literally a point where I was so scared of people I didn’t know I wouldn’t even ride my bike outside haha! When my mom found out I was going to Michigan State University and would be living in an apartment, she took the time to go over all the ways she could think of to stay safe. Even though this has never been a problem for me personally, I feel safer just practicing the things she suggested.

I was able to participate in the class, and it was really eye-opening. There are so many common sense things that I would never have thought to do. Common sense things that can literally save your life. I thought since summer is coming and most of us will be going out on the town, or working at jobs that require us to walk to cars after dark I would post some things that I learned in the class to help keep you safe.
Did you know that in the United States, 1.3 women are raped every minute? That results in 78 rapes each hour, 1872 rapes each day, 56160 rapes each month and 683,280 rapes each year. That’s pretty scary stuff. Here’s some ways to protect yourself:
- Walk in well lighted areas.
- Check under your car and in your back seat with your keys in hand before you enter your vehicle.
- Remain alert in public.
- Never get in a car with a stranger, fight back as much as you can. Statistically once you are put in someone’s car you have an 80% chance of being injured or killed.
- When working late or going out on a date, inform someone where you are going and when you will be home.
In addition, be assertive. If you can, run away. If someone grabs you fight back. And invest in a self defense course, they are a great work out and can save your life!
