Come join us at The Landings at Chandler Crossings for our biggest event of the year!

Not only is this a pool party, but it’s a field day as well. There are several sports planned including beach volleyball, basketball, street hockey, and flag football. If sports isn’t your thing, come participate in our other events planned such as the tug-o-war, water balloon toss, egg on a spoon race, and corn hole.

In addition, there will be a ton of free food at the event! There will be a keg of root beer, so come show off  your skills at our MSU apartments playing  root beer pong and flip-cup.

There will be music playing by our guest DJ and lots of prizes to be won!

The event is Wednesday, June 10th from 2pm-5pm. Hope to see you all here at the Landings.

Great Food for East Lansing Students

We all know that we should be eating better, especially as pool season in East Lansing is quickly approaching, but as hard as I try it’s hard to pass up that cheese burger and fries for a salad. As an avid food lover, but a starving student I realize the need for great tasting food that costs next to nothing and only sounds fatty.  Here are a couple of my favorites:

Southwest Veggie Burgers (Makes 5):

1/2 cup diced onion
1/2 cup dry breadcrumbs
1/4 cup chopped cilantro
2 tablespoons minced seeded jalapeño pepper
2 tablespoons reduced-fat sour cream
1 teaspoon hot pepper sauce
1/2 teaspoon ground cumin
1/4 teaspoon freshly ground black pepper
1/8 teaspoon salt
1 large egg
1 (15-ounce) can pinto beans, drained
8 oz of frozen corn thawed

To make the burgers, combine everything EXCEPT the pinto beans and corn.  Mash about ¾ of the pinto beans and corn with a fork.  Divide into 5 portions and flatten into burgers and refrigerate for at least 10 minutes. Heat olive oil or canola oil over medium heat.  Cook for 4-5 minutes on each side or until hot throughout.   Serve on whole wheat buns with lettuce, tomato, and any other veggies you can think of.

Roasted Asparagus – (Serves 4)

1 bunch of Asparagus – Keep your eye out for a sale
1-2 T of extra virgin olive oil
Salt and Pepper to taste

Preheat the oven to 425 degrees F.  Place foil on a flat baking pan.  Place all washed asparagus on the pan and drizzle with olive oil.  Add salt and pepper to taste.  Bake for 10-20 minutes depending on thickness.  The asparagus should be tender and slightly caramelized.

Overstuffed Baked Apples (recipe courtesy of Rachel Ray)

4 Large McIntosh, Empire, or Green Apple whichever you prefer, cored
1 T lemon juice
3/4 cup brown sugar
1/4 cup rolled oats or dry instant oatmeal
1/4 t nutmeg (optional)
1 t ground cinnamon
4 T butter, cut into pieces
1/8 cup golden raisins, chopped
1/4 cup chopped walnuts or pecans

Preheat oven to 425 degrees F.  You can half the apples to make them easier to core and make 8 servings.  Sprinkle cored apples with lemon juice. Mix next 7 ingredients and over-stuff apples. Bake 20 minutes, or until soft, in a small oven safe dish. Serve plain or with ice cream.
