"Behold, the Breakfast Nacho!"

 

OK, so you might be disgusted by the title but breakfast nachos are actually really good! Making breakfast nachos is actually a tradion for all of my MSU friends now. This is how the tradition started. I got the idea from Flats restaurant in East Lansing (It is such a shame that they are closed now.)  The recipe calls for scrambled eggs instead of hamburger meat, making it a “Breakfast” nacho. You can enjoy this Mexican cuisine any time of day! (My friends and I make them as our fourth meal… lol) 

Here’s the step by step instructions:

  1. Get scramblin’! Scramble your eggs and use the spatula to break the egg up into smaller chunks so they fit better on the chips. 
  2. Organize your chips on a plate.
  3. Pour the eggs onto the chips and add your favorite toppings! (I like to use salsa)

TIPS: -I use Egg Beaters or an egg white substitute since they are fat free and cholesterol free, but of course you can use regular eggs. The Tostitos Baked Lays also make a healthier option instead of traditional tortilla chips and their shape is convenient. You can make this recipe as healthy or as enjoyable as you wish! Eggs cook much faster than hamburger so this is a nice, easy and quick meal!
